Bay Fishing Trips

Fish Port O’Connor the way it’s meant to be fished.

From wading the flats to drifting open water or setting up on anchor, we’ll use the method that makes the most sense for the fish, the season, and the conditions that day.

Our bay trips target a variety of species throughout the year, and no two trips are exactly alike. Depending on what we’re after and what the fish are doing, we may throw artificial lures, work live bait, or fish dead bait.

Whether you’re looking to put the kids on some fish, spend a day chasing your favorite inshore species, or simply enjoy a day on the water around Port O’Connor, we’ll build the trip around your group and what the day gives us.

I’ll make artificial lure recommendations based on the species, season, and current conditions, but customers are welcome to supply their own.

If we use live or dead bait, the cost of that bait is the customer’s responsibility.

Tarpon Fishing

Chase the Silver King

When the tarpon show up around Port O’Connor, it’s time to go to work.

These powerful fish are one of the most exciting catches you can experience on the Texas coast. Tarpon trips are seasonal and conditions dependent, and we’ll spend our time targeting these fish where and when the opportunity is right.

This isn’t a numbers game — it’s about putting in the time, finding the fish, and being ready when that opportunity finally comes.

Tarpon Trips

Tarpon trips are customized around the season, weather, water conditions, and current tarpon activity. Depending on conditions, we may fish different areas and adjust our approach throughout the day.

These trips are available for anglers who are ready to put in the work for a shot at a true Texas trophy.

Important: Tarpon are wild fish, and a hookup or catch can never be guaranteed. Tarpon trips are seasonal and dependent on weather, water conditions, fish activity, and other factors outside of our control.

Tournament Guiding

Come to Fish. We’ll Handle the Rest.

Tournament fishing is a different ball game. There’s a lot more that goes into tournament day than just putting the boat in the water and hoping the fish cooperate.

Our tournament guiding includes the early mornings, extra preparation, scouting, long days on the water, and local knowledge that can make a difference when it’s time to fish for a check.

Tournament Rate

$1,000

The tournament rate covers the additional time and work that goes into getting ready for tournament day — including early arrival, preparation, and the longer hours typically spent on the water.

Depending on the tournament and what your team is looking for, additional scouting, fishing days, bait, or preparation may be added to the trip. Rates will be adjusted accordingly based on the situation and how many days we’re involved.

Your Team • Your Plan

How Involved Do You Want Your Guide?

Every team is different, so we’ll figure out what works best for you.

Depending on the tournament, your guide can be there to run the boat, serve as your designated driver, help locate fish, keep you on the bite, or even fish alongside the team when tournament rules allow it.

Before Tournament Day

WE’LL HANDLE THE REST.

Some teams want a little local knowledge. Others want the full game plan.

Either way, we’ll put in the work before tournament day so you can focus on fishing when it counts.

Additional Fees: Additional fees for bait, scouting, additional fishing days, or extended guide involvement will be discussed with the team before the tournament.

Beach Excursions

Your Own Little Piece of the Coast

Leave the crowds behind and spend the day where the bay meets the Gulf.

Our beach excursions take your group by boat out to the pass for a true Port O’Connor beach day. Once we drop anchor, the schedule is simple — no schedule. Just sand, sun, saltwater, and time to enjoy it.

Spend the day swimming in the clear water, soaking up the sun, searching the shoreline for shells and treasures, or letting the kids run wild on the beach. Bring a cooler, your favorite drinks, some music, and good company — and settle in for a day that feels a whole lot farther away than it really is.

Whether you want a fully guided hunt or prefer to handle the calling and shooting yourself, we offer options to fit the way you like to hunt.

Texas Coast

Local Knowledge You Can’t Buy

Port O’Connor serves as his base of operations, but his experience stretches far beyond it. His fishing knowledge covers the Texas coast from Matagorda Bay all the way down to the Lower Laguna Madre, with years spent learning the bays, passes, flats, shorelines, and seasonal patterns that make this coastline unique.

His waterfowl experience is just as deep — from sheetwater flats across the coastal prairie to the back lakes and remote reaches of Matagorda Island. He knows how the birds move, how the water changes, and what it takes to get into position when the conditions are right.

MEET THE CAPTAIN

JONATHAN “PORKCHOP” WILLIAMS

Jonathan “Porkchop” Williams on the water

If you ask Jonathan what he’d rather be doing, chances are the answer is going to involve a boat, a fishing rod, a shotgun, or somewhere he can get his boots dirty.

Fishing and hunting aren’t just what he does for a living — they’re a huge part of who he is. For the past 24 years, Jonathan has made his life on the Texas coast, chasing fish, hunting the marsh, learning the water, and building friendships along the way.

And if you spend a day with him, you’ll quickly realize one thing — Porkchop is going to make you laugh. He’s got a big personality, a quick sense of humor, and the kind that makes a day on the water feel less like a guided trip and more like you’re spending the day with an old friend.

But underneath all the jokes, stories, and good-natured shit-talking is a captain who takes his responsibility seriously.

Jonathan holds a Master Captain’s License and believes there’s nothing more important than getting everyone home safely. Whether he’s taking out a group of buddies, a first-time fisherman, or a family with kids, you can trust him to know the water, pay attention to the conditions, and take care of the people in his boat.

Because when you put your family in someone else’s hands, trust matters.

For Jonathan, guiding has never just been about putting fish in the boat or filling a duck strap. It’s about the experience — the laughs, the early mornings, the stories, the big fish, the ones that got away, and the memories people take home with them.

He’s spent 24 years learning the Texas coast, from Matagorda Bay down to the Lower Laguna Madre, and there’s nowhere he’d rather be than on the water or in the marsh doing what he loves.

So whether you’re chasing tarpon, fishing the bays, jetties and surf, or sitting in a duck blind before daylight, you’re going to get the real deal.

A captain who knows his stuff.

A guide who loves what he does.

A guy who will probably give you hell all day.

And someone you can trust to take care of you and your family.

This isn’t just a job for him.
This is his life.

And when you climb aboard Hell & Highwater, you’re not just booking a guide.

You’re coming along for the ride with the captain.
